The road turns into a dirt path before reaching the estate. It winds between two small hills: the one to the northeast is dotted with vineyards and woods, while the other, to the south, offers a glimpse of a hamlet of houses. Once past the gate and up a short hill, you arrive at a vast open space: from here, the landscape stretches out unobstructed, from Monte Amiata to the Argentario, with the island of Giglio appearing behind the promontory and the blue line of the Tyrrhenian Sea.

It was here that Remi and Sabrina decided to bring their winemaking project to life and create a wine that reflects the character of this place.

That was in 2016.

The Strength of the Team

Remi and Sabrina thus began to bring their vision to life: planning new vineyards and producing their first vintages. They sought to capture the genius loci of their chosen region.

In 2018, two key figures joined the estate: Valentina, who took over technical management, and Vittoria, who oversees business development. Together, they bring enthusiasm and consistency, ushering in a period of vibrancy and creativity. After a long apprenticeship spent among the vineyards, in the cellar, and through countless tastings, they now promote Quinto’s wines around the world, each with her own perspective and energy.

Intergenerational dialogue has become central to the estate’s identity: Remi and Sabrina bring experience and a sense of balance, while Vittoria and Valentina are constantly challenging themselves and exploring new directions. It is through this ongoing dialogue that each vintage takes shape.

The Tenuta Il Quinto project relies on many other people: Marco, Boshko, Noemi, and Daniele—each with a different role, but all indispensable: the one who tends to the vineyard day in and day out, the one who monitors fermentation and aging, and the one who welcomes visitors and tells the story of the wine.

Il Quinto is, above all, about that balance of shared work. It’s also about the friendly get-together at the end of the day, when we finally take a break over a drink.

Vineyards and Olive Trees in the Maremma

The Sense of Place

The estate covers 70 hectares of woods, vineyards, and olive groves, at an elevation of about 300 meters above sea level.

In the unspoiled Maremma, the vineyards blend into the landscape without dominating it. Our 12 hectares of vineyards are nestled within the Mediterranean scrub, interspersed with woods, clearings, and olive groves, in a highly diverse ecosystem. The soils are rich in galestro, a rocky and crumbly soil typical of central Tuscany, which drains excess water but gradually returns it to the subsoil along with the minerals it contains, contributing to the vibrant and fresh character of our wines.

Hand-crushed grapes

From the Vineyard to the Cellar

Each plot in our vineyard experiences the season in its own way: it moves forward, slows down, and surprises us. Some are bold, others more reserved, but all require a clear vision and quick hands. Remi says that the Maremma doesn’t give in; it challenges us to make wine by following its whims.

Small plots, the wind blowing through the vines, the slopes—all of these factors set the pace of our work. We observe; we touch. Precise pruning; carefully measured compost and green manure.

Stainless-steel tanks in the cellar

At the end of summer, the grapes arrive at the winery still brimming with energy. We ferment them in stainless steel or wood, and age them in casks, barrels, concrete tanks, and amphorae. Each container is a valuable tool for bringing out the best in the vintage. And let’s not forget the technique: measured, tailored, and mindful.

Thus, our wines are born of instinct and experience: some vintages have a harsh, vibrant character, while others are soft and deep.

Punching down the cap in a barrel

The bottles “arrive” from the vineyard, still carrying the scent of the sun and the earth. There is the rhythm of the days, sudden decisions, and calculated risks. Every sip carries this imprint: liveliness, tension, color.

And finally, a little bit about who we are.
